Grown at 1,800 MASL on the Perla Negra farm and processed at Sigilo Station, this unique offering undergoes a natural fermentation activated with yeast for 96–120 hours, followed by a thermal shock step where cherries are exposed to 45–60°C water.

What Makes "Ombligón" Unique

1. Rare Varietal:
Ombligón is an obscure, almost mythical Colombian varietal not commonly seen on the specialty market. Its name, in Spanish for "bellybutton" comes from the small dimple at the base of the cherry, a result of its tightly compact seed. This anatomical trait is linked to increased density and complexity in the cup.

2. Thermal Shock Processing:
This coffee undergoes an experimental natural fermentation with yeast, followed by a thermal shock stage where cherries are immersed in water at 45–60°C. This innovative method amplifies fruity, floral, and wine-like characteristics, while preserving structure and clarity.

3. Micro-Scale Precision:
Careful cherry selection, multi-phase fermentation, and raised-bed drying under parabolic cover combine to yield exceptional precision and flavor stability. Each step is fine-tuned at Sigilo, a boutique processing station committed to sustainability and craft
